Difference Between Magic Imovie

Fish couscous my way

Hi everybody,

here I am with a recipe I tried last week.

It is based on the Sicilian "cuscus alla trapanese" recipe with some modifications (not so many actually).

The sicilian "cuscus" obviously derives from the nearly omonimous north-african couscous which is, however, prepared using meat and vegetables instead of fish.
The sicilian version acqired during the centuries peculiar aspects and it's now quite different from its supposed african "ancestor".

In my version I prefer to use the precooked couscous (in order to reduce a bit the preparation time) as well as common kind of fishes instead of the traditional ones (e.g. mullets, gurnards etc.) which are much more difficult to find and to bone.

Ingredients (4-6 portions):

1 medium-sized sea-bass (Dicentrarchus labrax - about 500g);
1 medium-sized gilt-head (Sparus aurata);
1kg vongole veraci (Tapes decussatus);
2-3 cuttlefishes (sepia officinalis);
8 big prawns (possibly raw and with their heads on)
4 garlic cloves:
1 big bunch parsley;
1 carrot, 1 minced onion and a couple of celery stalks;
1-2 bags saffron powder (about 0,6g);
800g canned tomato pulp;
1/2 glass white wine;
500g precooked couscous, salt, about 8 tablespons extra virgin olive oil.

Special tools:
1 large wok; 1 large steamer (e.g. chinese); 1 large oval steel pot.

Preparation (about two hours):

First fill the oval pot with about two litres water, add the chopped onion, the carrot, the celery stalks, some parsley leaves, two garlic cloves and some salt, add the prawn heads and their shells (save the meat for later), the dorade and the sea-bass (both gutted and scaled), put on high heat, bring to boil and then lower the heat; after about half an hour the fish should be done (the eyes should get white and slightly popped-out).
Get the fishes out of the fish stock, allow to slightly cool-down and start to remove the fish fillets.
Put the fillets in a large dish and filter about 500ml fish stock (put the stock in a bowl) we will use both the fillets and the fish stock later.

Wash the vongole and discard the broken and or empty ones.
Fill the wok with about 1 litre water, put the steamer into the wok and cover its bottom with some parsley leaves. Now add the vongole, cover the steamer and put the wok on high heat.
As soon as the vongole begin to open remove them from the steamer and put them in a large bowl.
Once you have removed all the vongole, cover them with the (filtered) stock obtained during the steaming process (they have to stay wet and soft), discard all the vongole that did not manage to open.

Carefully gut, peel and clean the cuttlefishes and cut them into stripes (about 3-4cm long, 1cm wide), chop a huge quantity of parsley.
Now take the wok, add the olive oil and two garlic cloves, put on high heat, when the garlic cloves begin to fry, add the cuttlefish stripes and the white wine, allow the wine to evaporate, then add the tomato pulp, the chopped parsley and some salt.
Allow to cook on medium heat for about 40 minutes (the cuttlefish has to be quite soft). Now add the vongole with their stock, and the raw "naked" prawns, cover the wok and remove from the stove - the prawns are supposed to cook very very shortly and to stay as soft as possible.
Warm the fish stock, add the saffron and stir gently, add the precooked couscous and let it get soft.

Serve the fish soup very hot with a generous quantity of couscous and....as usual

"KYRAHM cries blood" is a documentary video about the extraordinary research conceptual artist Kyrahm is carrying on. Since several years she is active in Performance Art and Body Art among museums and art galleries in Italy and also in international art festivals. This is a journey though Europe and United States to witness hoe the different contemporary art languages are melt together in her project “Framment-Azioni e il feticcio d'arte" / “FragmentA(c)tions and the art’s fetish” : a series of sculptures and paintings made of the precious props from important Live Art performance artists, together with a series of Video Art works, become the plot through which play her Human Installations, apocalyptic performances of strong emotional impact, awarded by important art prizes.



Julius Kaiser in involved in Performance Art since he encounters Kyrahm in 2007 when they start a very fruitful collaboration.


Together They created experimental performances, Called Human Installations (term coined specifically for Their Work) winning in 2009 with the ARTE LAGUNA PRIZE "Gender Obsolescence - Human Installation # 1."






"Kyrahm crying blood" is a documentary about the extraordinary research Kyrahm conceptual artist for several years in the active Performance Art and Body Art in Italy at museums, galleries and host of international festivals in the world. A trip through Europe and the United States testifies to the fusion of the different languages \u200b\u200bof contemporary art in its draft "Fragment-Shares and the fetish of art" : sculptural works and paintings created using props from operations of important artists of Live Art, together with a series of works of video art, make up the plot along which winds its installations Human performance and the apocalyptic strong emotional impact, the winners of prestigious awards.

History of pasta - Part Three

La pasta, intesa come impasto composto da farina di grano and hard water, but almost certainly is of Middle Eastern origin.

Sicily was in fact (along with Puglia Sardinia), one of the most popular areas of production of wheat, whose outstanding quality was enhanced by Plinio. From Sicily

More or less simultaneously, always through the pressure of Arab civilization, pasta arrived in the Iberian Peninsula.

Another interesting clue to the early spread of pasta in the south of Italy is found in the Codex
Diplomaticus Cavensis, which speaks of a certain Mari, nicknamed mackarone.

This would tend to think that this food was already well known and widespread in Campania, and Sicily before.

itriyya The Arabic word, then deformed in Alatriste, tria, three and so on. Appears as early as the ninth century, in a text of medical Jesu Bar Ali, itriyya he defines as a "food flour in the form of thread ".

Other citations included in the Canon of Avicenna and Clavis Sanationis doctor Simon of Genoa, which clarifies that the three are derived from "an unleavened, and in the form of long threads.

Other terms associated with that of itriyya, in the writings of Arab culture, are "reshta" (quoted by Avicenna), "fidaws" and "mhammis and sa'iriyya (graniforme of pasta).

In 1577 comes the adjustment of the masters of the art fidelari of Savona, demonstrating the tendency to expand this important enclave production of dry pasta in northern Italy.

In any case, note Silvano Serventi and Françoise Sabban:

"[...] faithful to its tradition of mercantile city, Genoa has built its reputation as the capital of the pulp through trade ... but not that its inhabitants develop a particular sensitivity to this type of food or give rise to a cuisine of its cultural value. I do not like the Genoese, and have never loved pasta more than the average of the Italians [...] ".

The first treatises on food, almost all of north-central area and on culture "rich and noble food, dried pasta and neglect the great privilege of long the fresh, soft wheat, simple and filled.
Out of 120 recipes found in the most famous books of the time, those devoted to "tria Genoese" of the Liber de coquina counted on the fingers of one hand. In the Book

In the fifteenth century, an order of the authorities in Palermo, but also similar documents relating to the activities of the port of Genoa, evidence of a habit to give to the masters of vessels licentia ExTraH pastillos, ie a kind of permission to withdraw during travel between 10 and 30 rolls of macaroni and vermicelli for "personal use".

In the fourteenth and fifteenth centuries, Sardinia, together with Sicily, was one of the main centers of production of dry pasta in the Mediterranean.

On February 15, 1467 was sent from Sardinia a load of fideus for the table of King John II of Aragon. In

The best wheat at the time, sought for the production of pasta, was the Saragolla Puglia, which will remain the best raw materials to the discovery of the equally famous wheat Taganrog.

The knowledge of the craftsmen of pasta from Campania, the best wheat at their disposal (the aforementioned Saragolla imported mainly from Puglia) and above the funds made available by the early millers-entrepreneurs in the area, put a pole that will make it famous Neapolitan pasta in the world. We talk about the birth of manufacturing pasta at Torre Annunziata and Gragnano.

At the end of the eighteenth century the 26 pasta at Torre Annunziata already producing about 445 tons of pasta per day.

The development of the industrial district of Gragnano will be a little 'later, during the nineteenth century: in 1859 are counted as many as 81 of the Archimedes presses for the production of macaroni, which will become 120 in 1863, and gave work to live hundreds of people.
A team of eight workers who worked on several machines simultaneously, in a day could produce up to 10 pounds of pasta per day. The dough becomes

Foreword:

Orecchiette pasta is a type of native to Apulia, Whose shape resembles a small ear (in Italian, "ear" is ear).
An auricle is about 2cm in size and looks like a small white dome with a rough surface.

Although the word "broccoli" is in the name of the plant, broccoli raab is not actually a "broccolo" (in italian the term "broccoli" is the plural form of "broccolo").

Like other "Brassicaceae" (plants similar to broccoli), broccoli raab has a strong, peppery taste, dark leafy greens, and stalks which are tender, turning woody with age. It can be cooked in any number of ways (preferably first boiled) and also eaten raw, and it is typically harvested young, before it turns too bitter and hard.

Broccoli raab could be considered the wild relative of broccoli, small, loose florets are tucked between large leaves, and taller flower stalks protrude from the plant. All of these parts of broccoli raab are edible, the flower stalks in particular.

The origin of broccoli raab is unclear, since it is cultivated all over the world. Italians use broccoli raab in a wide range of dishes.

The dishes should preferably be sprinkled with cacioricotta (basically dried sheep's milk ricotta cheese).
A good alternative would be to mix some aged romano cheese with some grated young pecorino.
Parmigiano Reggiano would generally not be ok.

Ingredients (4 portions)
400g orecchiette;
1kg raw broccoli raab;
6-8 tablespoons extra virgin olive oil (EVO);
2 garlic cloves;
1-2 salted anchovies;
1-2 small dried chillies
Salt, grated cacioricotta, regular romano-cheese or soft pecorino cheese.

Preparation (about 1 hour):

Clean the broccoli raab, remove the thicker stalks, rip the leaves into small pieces (about 3x3cm) and cut the softer stalks into bits (about 3-4cm long - don't discard the florets cause their sweet and savoury).
Prepare a large pot, fill it with about three litres water and put on high heat.
As soon as the water begins to boil, add some salt. Now add the broccoli and allow to boil until the stalks are soft (about 10 minutes).
Drain very well the broccoli using a skimmer spoon and keep the broccoli stock in the pot - we will use it later.
Allow the broccoli to get cold, then squeeze them carefully with your hands (they have to be as dry as possible).

Put the broccoli stock pot on high heat, eventually add some water (about 1-2 litres) and some salt.

Put a large pan (about 30cm) on high heat, add the EVO, the anchovies, the chillies and the garlic cloves.
Remove the garlic cloves once they're slightly coloured (don't let them get brown) and, once the anchovies are completely melted in the hot oil, add the broccoli raab.
Allow to fry until the broccoly raab is very slightly crisp.

In the mean time, cook the orecchiette in the broccoli stock and, just before the end of the cooking time (about 10 minutes - see package), put again the broccoli pan on high heat and directly add the orecchiette to the frying broccoli using the skimmer spoon, turn gently and serve hot sprinkled with grated cheese.
